- 1 tomato

- 1/2 cup mayonnaise
- 1/4 cup tomato ketchup
- 1 tbsp chili sauce
- 2 inch cinnamon stick
- 1 tsp ghee

- To prepare paneer steak, in a plate take chili powder, coriander powder, chaat masala, crushed kasuri methi, ginger garlic paste, salt and mix (no need to add water). Apply the paste over thick paneer slices. Let it marinate for 30 minutes.
- Meanwhile prepare Smokey mayo sauce. In a deep bowl take mayonnaise, tomato ketchup, chili sauce and mix well..
- Burn cinnamon stick in the flame. To give Smokey flavor to the sauce, place a small cup in the center of prepared sauce and place burnt cinnamon stick and pour ghee over stick. Cover with a plate and let it sit for 15 minutes.
- To prepare crispy paneer stake. Coat each slice with maida and dust off excess flour.
- In a deep plate take 1/2 cup maida, salt, pepper powder. Add water and make a thick paste. In another plate spread bread crumbs.
- Dip dusted paneer slice in the paste and then coat with bread crumbs.
- Deep fry paneer slice in hot oil until golden and crispy. Alternatively paneer steak can be fried on air fryer at 180degC for 15 minutes by brushing with oil after 5 minutes and flipping in between.
- Toast burger buns with butter on inside part of the buns. Remove the cinnamon cup from the sauce and mix for the flavors to combine.
- Assembling paneer burger : on bottom of burger bun spread 1/2 tsp mustard sauce, place lettuce leaf.
- Place paneer steak followed by cheese slice. Stack it up with tomato slice, onion slice and sliced jalapeños. (Skip jalapeño for kids.)
- Spread Smoked Mayo sauce and place top of burger bun. Pierce a toothpick to keep burger intact.
- Serve Paneer burger immediately with French fries and Smoked Mayonnaise Sauce.
